- 4 -4 oz Halibut Fillets
- 10oz fresh baby Spinach leaves
- 1 Lemon
- 2-3 Garlic cloves
- 1 Tbsp Olive Oil
- Sea Salt
Preheat oven to 450 degrees.
Season a large baking sheet by rubbing the sheet with the cut side of the garlic clove. Finely chop the remaining garlic cloves.
In a large bowl, toss the rinsed spinach with the diced garlic, olive oil, and ¼ teaspoon of sea salt and spread evenly, in one layer, on the sheet pan.
Place Halibut fillets on top of the spinach. Season the fillets with salt and pepper and the juice from one-half of the lemon. Top each fillet with a lemon slice.
Bake until the Halibut flakes easily, 7-8 minutes.
