This Pork Tenderloin Brings New Meaning to “Mouth-Watering”…
If you desire something both sweet and savory for your taste buds, congratulations! Your search is over. Our apricot dijon pork tenderloin recipe is Phase 1 friendly and will have you licking your [pork]chops every time you think about them!
Ingredients:
- 1 package pork tenderloin (2 loins)
- 4 tbsp Walden Farms Apricot Jelly
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tbsp Walden Farms pancake syrup
- 2-3 tbsp dijon mustard
- 1/2 tsp onion powder
- Sprinkle of Ideal Protein salt and black pepper
- Cooking spray
Directions:
- Preheat oven to 400
- Heat apricot jelly for 20-30 seconds in microwave, then add dijon mustard and stir
- Mix dried spices together
- Rub olive oil over pork loins, then sprinkle with the dried spices and jelly/mustard mixture (let it marinate for 20-60 minutes)
- Spray baking dish with cooking spray, add pork loins, coat with remaining marinade
- Roast for 30-40 minutes until internal temperature reads 160 degrees for medium
- Let stand 10 minutes before serving
