Ingredients
- 2 medium green zucchini
- 2 tbsp. water
- 1 tsp. cinnamon
- 2 tsp Splenda
- 1 tbsp. lemon juice
- 1 packet Ideal Protein Apple Cinnamon Soy Puffs
- 1 tbsp. Walden Farms Apple Butter
Directions
- Peel and slice the zucchini thinly.
- Spray a non-stick pan with Olive oil, and heat over low.
- Toss in zucchini and 2 tbsp. water.
- Add Walden Farms Apple Butter.
- Add Splenda.
- Let zucchini soften in a pan on low heat.
- Stir cinnamon.
- If desired – crush Ideal Protein Apple cinnamon soy puffs and pour half into the mixture, save half for later.
- Once the zucchini has softened, and there is a light syrup on top, take off the heat and let it cool.
- Put zucchini in a pie dish or ramekin, and top with the rest of the soy puffs.
